Going along with the birthday theme- this snack was on my birthday! So why not celebrate 25 by sharing snacks with others 🙂

When you are given almost complete freedom to do whatever you want for a school assignment, you think it’d be easy. At least that is what I thought… but I couldn’t for the life of me pick something without asking other people for their ideas. I ended up ignoring what everyone had given me as ideas and I decided  to continue on with something that I already love to do, but take it the extra mile. So far, it has been quite fun. Trying out new things that I have never made before is quite fun and sharing it with new people that are not members of my family has been a bit scary but at the same time really rewarding. 

Only 2 weeks in and some of my classmates have already said that my snacks on Tuesday mornings fuel their desire to be there and show up- HAH. 

This week when I was browsing Pinterest looking for something to make, one of my favourite desserts popped up; Tiramisu. I LOVE tiramisu- but m I have already made it, and wanting to follow making NEW things every week, I couldn’t make the original Tiramisu, however, recipes started popping up about all the other forms of Tiramisu there are… so down the rabbit hole I go and I found Tiramisu Cookies. And I knew that was what I was going to make. And I did. 

A coffee flavoured cookie with mascarpone cream “icing” I guess you could call it, finished with a dusting of cocoa powder- which I always think it weird because no where else in tiramisu is there cocoa powder, but hey, I don’t make the rules 🙂

I originally thought that the cookie was supposed to resemble a lady finger like a classic tiramisu, but when I finished baking the cookies, they were not like lady fingers at all so I had thought I made them wrong. They were dense with a little coffee flavour. They were good, but I was already defeated because I wasn’t super impressed with them. I felt like the reviews on this sweet treat was going to be poor because of the way I felt about them.  

They were weirdly shaped and too round and dome-like for my liking, so when I first took them out of the oven, I squished them with a spoon because I was going to be putting mascarpone cream on top and I didn’t feel like it would sit well on the dome-like shape

I immediately felt like I had just ruined them when I did that. Don’t mess with a good thing, isn’t that what they always say? But I did. Because I didn’t see them being a good vessel for toppings. After I had squished them and they cooled, some of them weren’t round, or too big, so I again, messed with a good thing, and I got a cookie cutter and I cut some of the cookies so they would be the same size. I was actually pleasantly surprised at how well this worked. They were round. They were flat. They were the perfect vessel for the topping. What more could I ask for?

AND THEN I remembered about my gluten free friends, so I obviously had to make them some as well… and to my surprise, I liked the gluten free one cookies better. The texture, the shape, even the taste. So I kind of started to feel like I was a pretty good gluten free baker at this point. I know it’s still early days, but I believe it.

The nice thing about these cookies was that the mascarpone cream going on top is naturally gluten free, so I didn’t have to make that twice. It was SO GOOD. How could you really go wrong tough- mascarpone, heavy cream, sugar, coffee? Sounds delicious, and it was.

When all the cookies had been cut and cooled, I piped on the cream frosting and dusted them all with cocoa powder (again, why, who knows) and I packaged them all up to take to my classmates.

Thanks to one of my classmates who gave me the idea to create a google survey for everyone to fill out, I did that! And it worked out great! It’s anonymous which is great because if anyone wants to be truthful and tell me they don’t like something, they can! And I’ll never know 🙂 Here are some of this weeks findings based on 14 responses;
